Oh hey, gorgeous #vancouver. Come here often? (Photo by vibrant)
The story of my kitchen is ‘things that are quick and tasty when combined’. I go through food themes and phases, and the current one involves food as vehicles for various asian hot sauces. That’s why I say ‘Tom Yummy’ soup, because it isn’t exactly classical Tom Yum soup (which I used to order every single time I was in a Thai restaurant, from age 9 up), but instead a tasty, close vegan approximation
And today, I whipped up a Tom Yum (ish) soup:
2 tbsp Thai Kitchen Red Curry Paste (vegan, whereas many of their pastes are not)
1 lemongrass stalk (chopped)
12 oz Firm Silken Tofu
4 cups water
1 vegetable bouillon cube
1 cup (ish) chopped white button mushrooms
Boil the water, add the bouillon and the curry paste. Whisk (or stir), until the paste/cube have dissolved. Drop in the tofu and whisk it as well. Then, add the lemon grass, mushrooms and simmer.
Delicious on such a wet rainy January day as today.
I tried to take a photo, but it just didn’t look as appetizing as it tasted.
In the last 4 months, since starting work at lululemon, I’ve been going to work on creating my vision for my life 10 years from now. Tooling around my computer found a delightful vision for my life, 10 years out from 2006, which I wrote for the “Ten Years From Now” party that my dear friend Sherry held at her house in the fall of 2006.
Much has shifted but much has stayed the same since writing that vision of life. And now I do have a more structured method to the madness of setting intentions and future visions for my life now.
First, my foundation for 2012: being curious, passionate and adventurous.
The wonderful MargoWheel shared a blog post from the equally wonderful Chris Brogan about setting three words to dwell in for the year. Words that are the architecture and fertile ground from which your actions, goals and intentions spring. These are what I will return to when questioning which path to take in a decision, which choice to make.
I’ve been playing with a few different ways to pull together my vision and goals, making a vision board (stay tuned for a photo), going to a goal coaching session at work, talking with friends, sharing with my parents (if you haven’t gone through a vision and goal setting session with your parents yet, I HIGHLY recommend it) and some mat based reflection (restorative yoga is the best for moving meditation.)
And with that, here is my vision for life in 2022:
I’m living with my partner and our two kids in Vancouver. We spend many weekends in our house that we share with friends on a gulf island. We share our reclaimed wood house with 3 other families and their kids. We live in a housing cooperative in downtown Vancouver, filled with families and multigenerational couples. Our kids are confident and curious, and love our sloppy mutt dog. We spend family time cycling, kayaking and canoeing in the summer, cross country skiing, snowshoeing and exploring in the winter. My partner is a successful entrepreneur, and I’m an inspiring leader in our People Potential, global department. I cycle to work, go to one tropical yoga retreat a year and run on weekends with my partner. Grandparents live nearby and dote on their grandchildren. Our home is a hub of our community, filled with good friends and great food.
